Richard Bosman’s Quality Cured Meats has been awarded Double Gold for its popular Smoked Streaky Bacon as well as the traditional Pepper Fuet, and Gold for its Prosciutto at the Aurora International Taste Challenge 2020 held this month.

“I am extremely proud of this achievement and it is a great to be acknowledged for the work that my amazing team and I have put in. It has taken many dedicated years to get to get to this point,” says Bosman, who started his business in 2009 to create world-class charcuterie using the best pork in South Africa.

The Aurora International Taste Challenge recognises food product excellence and aims to provide consumers with a trustworthy reference to professionally rated, high-quality goods. Each product is assessed on a variety of qualities including appearance, aroma, flavour complexity, texture, authenticity and workmanship. The panel of judges was convened by Celia Gilloway and included wine and food industry professionals Marzanjah Ackermann, Pete Goffe-Wood and Enid Hinrichsen.

The top selling Smoked Streaky Bacon, awarded Double Gold, is smoked for 24 hours with oak wood chips during the dry curing process. “This provides a special and delicate smokiness and ensures the bacon crisps up very quickly when cooking,” explains Bosman.

Also awarded Double Gold, the Pepper Fuet is a classic plain salami with whole peppercorns. Bosman says the salami is cured the traditional way with a 48-hour ferment followed by two months of aging.

The Gold medal winning Prosciutto is made using the best quality pork legs, which are trimmed and salted for a month before being washed with red wine and then dry cured for up to two years.

“Our partnerships with selected South African farmers ensure a consistent source of the very best pasture-reared meats,” adds Bosman. “We interfere as little as possible, relying on the quality of the meat and time to make the magic happen … and it’s always worth the wait!”

The awards come hot on the heels of the launch of Richard Bosman’s Quality Cured Meats online store as well as an App available on Google Play and Apple’s App Store.
